Preparation steps

  1. Finely chop onion and garlic and sauté in butter or clarified butter until translucent.

  2. Add green split peas and pour in vegetable broth, simmer for 45 minutes.

  3. Peel potatoes and carrots and cut into small pieces. Clean leek, halve lengthwise and chop finely.

  4. Add chopped vegetables and bay leaves to the pot and cook for a further 30 minutes.

  5. Slice sausages and warm in the stew for a few minutes if used.

Notes

Split peas do not require soaking. Cooking time is 60 to 90 minutes depending on desired firmness. Thickening occurs automatically during simmering.
