Broccoli Ricotta Pasta

Pasta with broccoli, ricotta and pine nuts. Preparation: roast broccoli, cook pasta, combine with sauce and serve.

  • 4 Garlic cloves (16 kcal)
  • 6 tbsp Olive oil (534 kcal)

  • 1 Organic lemon (29 kcal)
  • 400 g Tube pasta (e.g. mezzi rigatoni) (1484 kcal)
  • 250 g Ricotta (435 kcal)

Preparation steps

  1. Cut garlic cloves lengthwise in half. Clean broccoli and divide into florets. Drizzle both with olive oil, season with salt and pepper and mix well.

  2. Bake in a preheated oven at 220 °C (fan 200 °C) on the middle rack for 15 minutes.
  3. Toast pine nuts in a pan without fat until light brown and let cool. Finely grate Parmesan and wash, dry and grate the lemon zest.

  4. Cook tube pasta in plenty of salted water according to package instructions until al dente. Drain, reserving 150 ml of the pasta water.

  5. Add ricotta and lemon zest, stir together with garlic and Parmesan to form a sauce. Bring the sauce to a boil with the reserved pasta water and simmer for 1 minute over low heat. Fold in the pasta, season with salt and pepper and serve sprinkled with pine nuts.
