  • 1,5 cups frozen mixed vegetables (150 kcal)
  • 1,5 cups white long-grain rice, uncooked, rinsed (950 kcal)
  • 0,5 tsp ground turmeric (5 kcal)
  • 3 cups vegetable stock (30 kcal)
  • 0,5 tsp salt (0 kcal)
  • 0,25 tsp ground black pepper (2 kcal)

Preparation steps

  1. Heat the olive oil in a large skillet or saucepan over medium heat.

  2. Add the diced onion and cook for approximately 3 minutes, until it begins to soften. Stir in the minced garlic and cook for an additional 30 seconds.

  3. Add the frozen mixed vegetables and cook for 1-2 minutes, until they start to thaw.

  4. Pour in the uncooked rice and ground turmeric. Stir thoroughly to combine. Pour in the vegetable stock, season with salt and pepper, and stir to mix.

  5. Increase the heat to bring the mixture to a boil. Once boiling, cover the pan, reduce the heat to the lowest setting, and allow it to cook for 12 minutes. Remove the pan from the heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork and serve warm.
