  • 257 g Sheep's cheese (feta, crumbled) (668 kcal)
  • 4 pieces Eggs (372 kcal)
  • 60 g Almonds (ground, blanched) (345 kcal)
  • 3 tbsp Almond flour (108 kcal)
  • 1 heaped tbsp Coconut flour (53 kcal)
  • 4 tbsp Psyllium husks (ground) (8 kcal)
  • 1 piece Onion (finely chopped) (40 kcal)
  • 0,5 bunch Parsley (9 kcal)
  • Dill (optional)
  • Nutmeg, onion powder, garlic powder
  • Salt, pepper
  • 2 tsp Pul Biber (sweet chilli flakes) (12 kcal)
  • 1-2 tsp Paprika powder (sweet) (9 kcal)
  • Neutral oil, ghee or lard (for frying) (450 kcal)
  • 200 g Quark (140 kcal)
  • 100 g Sour cream (240 kcal)
  • 1-2 cloves Garlic (pressed) (12 kcal)

Preparation steps

  1. Finely chop the medium-thawed cauliflower using a food processor.

  2. Mix the chopped cauliflower with eggs, crumbled sheep's cheese, parsley, optional dill, ground almonds, almond flour, coconut flour, psyllium husks, chopped onion and the spices (nutmeg, onion powder, garlic powder, salt, pepper, Pul Biber, paprika powder) thoroughly.

    • Eggs (4 pieces)
    • Almonds (ground, blanched) (60 g)
    • Almond flour (3 tbsp)
    • Coconut flour (1 heaped tbsp)
    • Psyllium husks (ground) (4 tbsp)
    • Onion (finely chopped) (1 piece)
    • Parsley (0,5 bunch)
    • Dill (optional)
    • Nutmeg, onion powder, garlic powder
    • Salt, pepper
    • Pul Biber (sweet chilli flakes) (2 tsp)
    • Paprika powder (sweet) (1-2 tsp)
  3. Let the batter rest for about 20 to 25 minutes to allow the flours and psyllium husks to absorb the moisture from the cauliflower.
  4. Heat plenty of oil, ghee or lard in a pan. Shape small patties from the batter and fry them for about 3-4 minutes on each side until golden brown.

  5. Place the fried patties on kitchen paper and let them rest for 30 to 60 minutes to firm up while cooling.
  6. For the dip, mix quark and sour cream. Add the pressed garlic, salt and pepper and mix well. Garnish the dip with some olive oil.
