  • 1 small Cauliflower (chopped into "rice") (100 kcal)
  • 0,5 Cucumber (8 kcal)
  • 150 g Cherry tomatoes (27 kcal)
  • 0,5 red Onion (20 kcal)
  • 100 g Feta (262 kcal)
  • 3 tbsp Pomegranate seeds (75 kcal)
  • 1 handful Fresh parsley (5 kcal)
  • 1 handful Fresh mint (5 kcal)
  • 3 tbsp Olive oil (360 kcal)
  • 1 tbsp Lemon juice (4 kcal)
  • 1 tsp Mustard (10 kcal)
  • Salt & pepper Salt & pepper
  • optional 1 pinch Cumin (1 kcal)

Preparation steps

  1. Finely grate the cauliflower or pulse in a blender until it reaches a rice-like consistency and briefly warm in a pan without oil to improve digestibility while keeping it firm. Then allow to cool.
    • 1 small Cauliflower (chopped into "rice") (100 kcal)
  2. Chop cucumber, tomatoes and onion into small pieces. Crumble feta coarsely. Combine all with pomegranate seeds and freshly chopped herbs in a large bowl.
    • 0,5 Cucumber (8 kcal)
    • 150 g Cherry tomatoes (27 kcal)
    • 0,5 red Onion (20 kcal)
    • 100 g Feta (262 kcal)
    • 3 tbsp Pomegranate seeds (75 kcal)
    • 1 handful Fresh parsley (5 kcal)
    • 1 handful Fresh mint (5 kcal)
  3. Mix olive oil, lemon juice, mustard, salt and pepper to prepare the dressing and pour over the salad. Combine thoroughly and let stand briefly.
